Omelet !

                     R  E C I P E    OF     «  M A R O C O         O M E L E T »



Ingredients  for 12 persons: 1 kilo of potatoes – 1 box of carrots and peas – 6 eggs – parsley –salt and pepper.

You cook potatoes in a pressure cooker or in a saucepan with water and salt.

You crush “a little” the potatoes.

You mix delicately potatoes , peas and carrots.

You add 6 yolks , parsley, salt and pepper.

You beat ( les blancs d’oeufs  en neige) and you insert them at  mash potatoes.

You put oil in a pot and when it is hot you pour  vegetables.

You cook during ¾ of hour.

After you return  twice the omelette in a plate and you cook the other side during 45 minuts also.
